We’ve asked two of UCO‘s budding young somms for their recommendations and here are their Malbec World Day picks:
Wine of choice: Calcáreo Río de los Chacayes, Malbec 2013 from Chacayes, Uco Valley, Mendoza.
“I chose this Malbec because with its unique acidity, round tannins and full body, it has the Michelini brothers’ stamp. Ripe red fruit notes star in this wine which has a long and pleasant finish. To sum up, a gem!”
Pair with: Glazed rib-eye cooked medium rare, carrot pure, mushroom tuile, fresh salad.
Wine of choice: Benegas Lynch Malbec, Finca La Encerrada 2011 from Gualtallary, Tupungato, Uco Valley, Mendoza.
“This top end Malbec from Bodega Benegas winery is very elegant and has good fine round tannins as a result of maturing 18 months in new French oak barrels. Apart from donning the typical characteristics of the Malbec variety, this wine also has interesting tertiary aromas.”
Pair with: 18 hour cooked shoulder of lamb, pea pure, rosti potatoes, and caramelized onions.
